This recipe I learnt from one of my Kerala friend. This payasam is so delicious that it is impossible to describe it in words. Nendram pazham helps to gain weight. Here is my recipe about making this mouth watering payasam.
Ingredients:
Ripe Kerala bananas -3 nos
Coconut pieces - 1/4 cup
Jaggery - 100 gms
cardamom powder - 1/2 tsp
Coconut Milk - 2 cups(thin milk)
Coconut Milk - 1 cup(thick)
Cashew nuts - 10 nos
Raisins - few
Ghee - 5 tbsp
Method
- Heat 1 tbsp ghee in a pan and fry the cashew nut with raisin till golden brown.
- Remove and keep aside.
- In the same ghee fry the coconut pieces.
- Remove and keep aside.
- Heat 1 tbsp of ghee and fry the cut banana pieces till the turn soft and golden brown.
- Cool and grind to a fine paste using 1 cup of thin coconut milk.
- Melt jaggery in 1 cup of water. Strain the syrup and keep aside.
- Heat 1 tbsp of ghee and fry the banana paste till it starts leaving the sides of the pan.
- Add the second cup of thin coconut milk and bring it to boil.
- Pour the jaggery syrup and mix well.
- Once the payasam starts boiling, switch off the flame and add the thick coconut milk, a pinch of salt, cardamom powder.
- Mix it well.
- Add the fried cashews, raisins and coconut pieces.
Yummy Nendram pazham payasam is ready to serve.
