#59 Sweet Potato Poriyal

Sweet Potato has many highly nutritious benefits.Sweet Potatoes are a great source of fiber,vitamins and minerals.

It supports your immune system.It also support healthy vision. The high water content in sweet potatoes make them great for weight loss.

January is a start of sweet potato season, I am planning to make some recipe with sweet potato. My first recipe with this is an easy Poriyal.

Its another simple dish and goes well with Sambar , Rasam etc. It just take about 15 minutes to prepare the recipe.

Ingredients:

Sweet Potato - 1 big size

turmeric powder - 1/2 tsp

Sambar powder - 1 tbsp

Salt   - as needed.

Coconut - 3 tbsp

mustard - 1/2 tsp

Urad Daal ( Ulundu) - 1/2 tsp

Curry leaf  - 5 to 6 leaves.

Coconut Oil - 1 tbsp.

Method:

Take a sweet potato and wash it well.

Cut the both corners and peel the outer layer.

Now chop into small cubes and place in water to prevent them from turning into black.

Add the chopped Sweet Potato into the sauce pan.

Add water and turmeric powder+sambar powder and boil it till it gets half cooked .

Then drain the water and keep it aside separately.

Heat a Kadai and add coconut oil. When the oil ready for frying heat,add mustard and let in splutter.

Add Urad Dal and let it turn light brown.

Add curry leaf then add half boiled sweet potato and mix well.

Keep in low flame. Add salt and mix well.

Then add grated coconut and mix it.

Cook for 3 mins and turn off the Stove.

Serve it hot with rice.
