#63 Mixed Veg Kurma

Delicious South Indian Style Kurma recipe made with mixed veggies ,coconut and spices.

Kurma is a gravy based dish and is served with Chapathi,Poori or steamed rice. There are different way of making Kurma gravy and this one a south Indian restaurant style variety.

Ingredients:

Onion - 2 big sized

Tomato - 3 small sized

Green Chili - 3 ( and Split vertically)

Carrot - 1 small sized

Beans - 8 Nos

Cauliflower - 1/2 cup

green peas - 1/2 cup

potato - 2 small

Clove - 2

cinnamon - 2

cardamon - 2

Oil - 2 tbsp

Red Chili powder - 1 tbsp

turmeric powder - 1 /2 tsp

Salt as needed.

Grinding :

Coconut - 1/2 cup

green chilies - 2 Nos

Cashew - 5

Ginger - 1 inch

Garlic - 4 pieces

fennel seeds ( Sombu) - 1 tsp

Poppy seed ( Kasa Kasa) - 1 tsp

Take a mixer jar and add all above items and grind it into a smooth paste.

Method:

Take a pressure cooker  and heat it. Add oil, 2 cloves,a piece of cinnamon,cardamon - 2 and saute it.

Add cut onion,green chili( split) and saute it till onion turns light pinkish.

Now add 1/2 cup of green peas,carrot,beans,cauliflower, potatoes and continue to saute the contents.

Add salt, 1/2 tsp turmeric powder , 1 tbsp of Kashmiri Red Chili powder and saute the contents well.

Add the chopped tomatoes and continue saute for 5 mins.The tomato juice oozes out and would start giving you the flavor.

Now add the ground coconut paste in the pressure cooker.

Add 2 cups of water in it.

Give a stir on the contents and close the cooker with the lid and pressure cook it for 4 whistles.

Switch off the flame and keep the pressure cooker aside until the pressure is relaxed.

Tasty Yummy Veg Kurma is ready to be presented on your table unboxing the restaurant style of making.

Serve the hot Kurma with Poori,Pulka,Chapathi,Brinji Rice or with steamed white rice.
