#45 Coconut Burfi

Coconut Burfi is another home made sweet that can be easily done at home. The ingredients are very easy to get and often one of the 24 * 7 maintained stocks in your kitchen.

This is one of the sweets that would be in the bucket list for any festive occasions. My mom is one of the perfectionist and had her own style of making this sweet. Obviously, for all us, our Moms are the first " I feel Lucky" google page to refer and so am I. She taught me this sweet as my kid demands this from here every time we visit her.

 

Ingredients:

Grated Coconut  - 1.5 cups

Sugar - 1 cup

Cardamom  powder - 1/4 tsp

Ghee - 1 tsp

Water - 1/2 cup

Method:

Take a tray and grease the tray with ghee and keep it aside.

Grate the coconut and keep it ready.

Heat the pan and add the grated coconut and saute in low flame till we get a nice aroma. This will take only a minute or two.

Do not saute it too much as it would turn Coconut change its colour and you would miss the white colour of the Burfi. Keep it aside.

Again, heat the pan and add sugar and water.

Keep the flame in medium to low flame to allow the sugar to completely dissolve in the water and melt completely.Cook it till the sugar syrup reaches a thick string consistency.

 

If we take a drop of sugar syrup and touch between the forefingers, it should form a string. This is the correct consistency

Now, add the grated coconut to the pan and mix the contents well.

Add cardamom powder to lift up the flavor.

Mix the Burfi mixture continuously by keeping the flame low to avoid sticking in the pan.

When the Burfi mixture start to leave the sides of the pan without sticking and when we stir at this stage, a foam will be formed and the mixture will roll like a ball.

This is the correct stage to remove the Burfi mixture out of the flame. Make sure to switch off the flame at this stage and do not miss  as it would make the coconut overcooked and gets into a powdered state.

Pour the Burfi mixture in the greasy plate/tray.

Allow the Burfi to cool off a little ( 5 to 10 minutes) depending on our room temperature.

Now start cutting the Burfi to your desired shape with a knife. Again let it cool off further completely.

Slowly take the pieces from the tray and shelve it your  covered storage box.

Yummy Coconut Burfi is ready for serving.
